Either way, now I have a surplus of buffalo wings, without much motivation to just eat buffalo wings.
So I got creative last night and made buffalo chicken macaroni and cheese with broccoli. I cooked the deboned wing meat to let the skin get a little crispy. While I had the pasta boiling, I added the broccoli to the chicken so it could thaw out and cook up a bit.
After draining the pasta, I added about 2 cups of whole milk, half a cup of pepper jack cubes, and about a cup of velveeta cubes. I also stirred in about 2 tablespoons of the ranch dressing that came with the wings, and let all that melt together with some garlic powder, pepper flakes, and a little paprika.
Once both components were awesome on their own, I folded the chicken and broccoli into the pasta and let them get to know each other for a couple minutes, finishing with a little black pepper to taste.
After all was said and done, I sat down to a nice evening of Kitchen Nightmares UK, with even more illusions of grandeur, thinking I'll open a caveman cooking restaurant one of these days.
